Many Middleburg locals are going to be disappointed when they're not able to get a reservation at Aster. Rarely does a jewel land itself in your backyard. The three-person team under the artful and able direction of Chef Hump with Aaron McCloud and Craig Erion has earned their monikers. To keep it fresh, exciting and to take full advantage of seasonal ingredients, Chef Hump has changed his menu 22 times in the past 16 months. Amazing. It's hard to find a creative essence in food outside big urban areas and we've got a winner right here. My last dinner included Hudson Valley Foie Gras (one of the best I've had and takes 3 days to make!), Veal and Mushrooms Three Ways (including black truffle!) and Nested Banana Split. And the "piece de resistance", every dining experience includes sampling a few of the Chef's amuse bouches, or to "amuse the mouth".

Aster's sign says, "Creating Memories in Dining". It's not just a sign people. It's an affirmation.
